Tasty, fell apart cooking the way they suggested, next time will cook the way I usually cook quesadillas. Next time add a little less filing or less cheese and it was a little mushy but taste was good and have left overs for lunch today

The Breakfast Quesadilla was SO good! It was very simple, easy, and quick👍 I made dunker eggs and put them in the quesadilla instead of using scrambled eggs.

In Austin, these are called breakfast "tacos" and remind me of the grilled versions we ate on The Drag during the 1980s and 90s and that have lived on in my kitchen ever since. I prefer mine made with fresh chilies instead of bell pepper, and potato instead of beans, although I like the bean ones just fine. Ordinary breakfast sausage is fine if you don't have chorizo
