Ingredients

- 18 eggs (12-18 depending on the number of people you'll be serving)
- 1/2 cup milk
- 1 onion (finely chopped)
- 1 red pepper (or green, chopped)
- 1 lb. pork sausage
- 1 cup shredded cheddar cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
- bread crumbs (1 piece of bread or toast, optional)
- hot sauce

Directions
- Brown pork sausage over medium heat until internal temperature reaches 160°F and drain.
- Beat eggs and whisk in all the other ingredients, including cooked sausage.
- Cover bowl with foil and store in refrigerator overnight.
- In the morning, grease a 9- x 13-inch pan and pour egg mixture in. Bake at 350°F for 45 minutes. Cut and serve.
