So I will admit to being a bit skeptical when I first put it into the oven. It seemed a bit runny & I ended up baking it for 25 minutes instead of 20. However, these turned out great! I used old-fashioned oats & added chopped walnuts & chia seeds for more nutrition. I also added a teaspoon of vanilla & used coconut sugar instead of brown. Since I have plenty of free, fresh blackberries in our neighborhood, I used them instead of bluberries.
I think any kind of berry would work for this recipe. I think fresh cranberries & some ginger & orange zest would make for a great fall adaptation. I can't wait to try it. 👍
