- 1 medium onion (chopped)
- 3 carrots (peeled and sliced)

- 2 cups butternut squash (peeled and chopped)
- 4 cups chicken stock
- 2 1/2 cups water
- 1 bunch kale (at least 4 cups stems removed & coarsely chopped)

Excellent! I did make homemade chicken bone broth in advance to use in this recipe. I also used ground turkey sausage and white Northern beans instead or red kidney beans because I like the look. There is a lot of chopping involved, but well worth the work for such a healthy and delicious soup.
