- 1 cup green lentils (or brown, picked over and rinsed)

- 1 cup collard greens (chopped fresh, or kale, tough ribs removed)
- 2 Tbsp. lemon juice (½ to 1 medium lemon, to taste)

i had to do some substitutes because because of IBS, skipped the onions, used plain water instead of vegetable stock, and no hot peppers. it's tastes really good and i haven't even put salt or pepper in it yet.

Incredible!!! This soup is so delicious, flavorful, and aromatic. I added extra curry powder and sprinkled in some smoked paprika for robust heat. My 7 year old nephew helped me cook it and was impressed by the flavor of the liquid.

Great tasting and pretty easy to make, too. I served it with warm French bread. I think the recipe says it makes four servings, but they would be huge. I served my Family of four and had plenty left over for the next day.

This lentil soup was absolutely delicious! Added a couple more tablespoons of lemon juice, a little more salt and added jalapeños with juice for extra spice and tangy-ness. Also substituted the kale with baby spinach and turned out great. Will absolutely be making this again!

Tasted great! I had to sub out the vegetable stick for chicken stock, i added an extra teaspoon of curry powder and threw whatever vegetables needed eating up. Will make again 👍

This has become a staple in my house. My entire family adores this soup. The recipe is great. The only thing I change is that I always end up using more of the required spices just to give it more flavor. I also usually add an entire bag of chopped kale and it’s delicious and healthy! 😀

I didn’t like the lemon in it and it could use more greens but otherwise it’s good.

Great recipe! On our second time making this we added roasted tomatoes with green chilies (from a can) since this is what we had on hand. It gave the soup a nice touch of heat and enhanced the flavor even more. Highly recommend giving the green chilies a try! This is how we make the soup from now on.

Used a pressure cooker, so eliminated the water entirely, did not drain the tomatoes, and used less stock. Followed all the steps through #4, then closed the lid, set the timer for six minutes, and walked away. When it finished, I let it vent 10-15 minutes and it was perfect.

This is the first homemade soup I’ve ever made and honestly didn’t know what to expect as I don’t even know if I’ve had lentil soup before 🤷🏻♂️. This was a really balanced and flavourful recipe that I will definitely make again, I just don’t think it’s the 110% best soup in the world. I’m a sucker for thicker soups.

This is absolutely delicious just as it is but is one of those recipes that you can play around with a little to suit your tastes.

My whole family loved it!!! Delicious and filling. I used spinach instead of collard greens but that was just a personal preference.

I added 2 cups chicken broth and 2 cups beef broth... so not vegetarian! Drained tomato juice into 2 cup container and added water to make the 2 cups required. Used fresh spinach and zested the lemon to add with the lemon juice. A couple of shots of hot sauce and voilà! Excellent soup!
