- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt (I used vanilla salt, but feel free to use regular)
- 1 Tbsp. cinnamon
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/4 cup dark brown sugar
- 1 tsp. vanilla bean paste (or vanilla extract)
- 1 large egg (lightly beaten)
- 1 cup nonfat greek yogurt
- 2 apples (large, peeled, cored, and chopped)
- 1/4 cup turbinado sugar (for topping, use regular brown if you don’t have turbinado – but this will add more crunch to the muffin top)
