- 1 Tbsp. coconut oil
- 1/2 onion (sliced)
- 2 garlic cloves (chopped)
- 1/2 red jalapeno pepper (sliced, or a couple Thai chiles, halved)
- 3 galangal (quarter-inch slices slices, or ginger)
- 1 lemongrass stalk (pounded with the side of a knife and cut into 2-inch long pieces)
- 2 tsp. curry paste (red Thai)
- 4 cups chicken broth (Whole30-compliant)
- 4 cups coconut cream
- 2 chicken breasts (medium, cut into bite-sized pieces)
- 8 oz. mushroom caps (white, sliced)
- 2 Tbsp. coconut aminos
- 2 Tbsp. fish sauce (Red Boat, plus more to taste)
- 3 Tbsp. fresh lime juice
- 3 green onions (sliced thin)
- fresh cilantro (chopped, for garnish, optional)

Super good even without mushrooms!!

I tweeked it by adding chili paste and it was delicious. I didn’t have fresh ginger or lemongrass but I used the paste in a tube and it worked great. Normally I would use galangal but lime juice was a definite switch!
