Description
Creamy, comforting broccoli cheese soup is simple to make and hits the spot on a cold evening, but you may find yourself making this crowd-pleaser year-round! Keep it in mind for office lunches, too. The recipe is a Yummly original created by Sara Mellas.

- 1/2 onion (large)
- 2 large carrots
- 2 stalks celery (medium)
- 2 cloves garlic
- 12 oz. broccoli florets (4 to 5 cups)
- 2 Tbsp. salted butter
- 1/4 tsp. salt (for vegetables)
- 1 tsp. Dijon mustard
- 1/4 cup all purpose flour
- 2 1/2 cups chicken broth (or vegetable broth)
- 2 cups whole milk
- 3/4 tsp. salt (for soup)
- 1/2 tsp. black pepper (for soup)
- 2 cups shredded cheddar cheese (use orange cheddar, 2 cups is 8 oz.)
- fresh parsley (minced, for serving)
- salt (optional, for serving)
- freshly ground black pepper (optional, for serving)

Directions
- Finely chop the onion, carrots, and celery. Mince the garlic. Chop broccoli into 1/2-inch florets, and finely chop any broccoli stems. Set garlic and broccoli aside.
- Melt the butter in a Dutch oven over medium heat. Add the onion, carrots, celery, and salt. Saute until vegetables are softened, 6-7 minutes.
- Add the minced garlic and mustard and stir until fragrant, about 1 minute. Sprinkle the flour over vegetables and stir to evenly coat.

The ingredients were good and healthy. It was too chunky for a cream soup before I added the cheese, so I used an immersion blender to smooth some of it. I grated an 8 oz block of fresh Tillamook cheddar cheese as I know pre-grated cheese is lightly covered in a powder to keep it from sticking and therefore doesn’t blend so well. However, this recipe was gritty, I’m guessing the flour was the cause. I don’t know how to correct this problem

I loved how it turned out!!!! Came out amazing! Felt good to hear everyone feedback on who got it….. I did used fresh ingredients from my local farmer’s market and fresh cheese. Will be doing it again. The Parsley garnish was delicious and I paired it with toasted French bread that was delicious.

This is probably one of the greatest and best Cheesy Broccoli soup I’ve ever had. And I’ve had a lot of different varieties and none of them compare to this one! I’ve made it 3 times in the past month! Huge hit! Also I may add it is cheap to make as well! Don’t let the 17 ingredients fool ya!
My bf who doesn’t like broccoli said it was truly amazing! 11/10 do recommend!

As others suggested, I did add heavy cream instead of whole milk to thicken some and Velveeta since I had some to use up as well as some little potatoes so yummy!

Excellent recipe. I read earlier comments and wanted to avoid a "thin" soup one person mentioned, so I substituted heavy cream for milk. Came out very thick and filling. Exactly what I was looking for. Family loved it, a keeper recipe for sure.

This broccoli cheese soup is flavorful, but very thin, even after adding in an additional slurry of flour at the end. Additionally, 2 cups of shredded cheese was not enough. For a hearty cheesy soup, it needs at least one more cup for a total of three. If I were to make it again, I’d probably cut the broth and milk in half and replace the missing amount of liquid with heavy cream or half in half to help thicken it up. Overall, the soup is good and if you’re looking for a lighter (and slightly healthier) broccoli cheese soup, then it fits the bill.

the recipe was easy and tasted pretty good! fed my family of 4 with some leftovers. i did use an immersion blender to make the broccoli easier for my baby to eat 😋

I made a few substitutes to make dairy free by adding ripple instead of milk, vegan cheese, and a little bacon for flavor. the kids enjoyed but I think next time I'll add a little spice.
