  • 2 tablespoons olive oil
  • 12 1/4 ounces sirloin steak (trimmed, sliced into 3/8 inch wide strips)
  • 1 red onion (large, sliced)
  • 1 red pepper (seeded, cut into chunks)
  • 1 orange pepper (seeded, cut into chunks)
  • 1 clove garlic (minced)
  • 2 oranges (large, zest removed with a vegetable peeler then sliced, juiced)
  • 2 cups beef stock
  • 2 tablespoons cornstarch (mixed with a little water to make a slurry)
  • 8 ounces runner beans (trimmed, sliced)

    Directions

    1. Heat oil in a large pan. Sear steak over high heat, stirring, for 4-5 mins, until browned. Add onion, peppers and garlic. Cook for 3-4 mins, until softened. Add orange juice, beef stock and cornstarch slurry. Bring to a boil, stirring, then cover and simmer for 15 mins. Add beans and orange zest. Simmer for 8-10 mins, or until steak and beans are tender. Serve hot.
