- 1/3 cup dry white wine
- 1/3 cup white wine vinegar (or champagne vinegar)
- 1/4 cup shallot (finely chopped, from about 1 medium shallot)
- 1 Tbsp. fresh tarragon (chopped plus whole leaves for decoration)
- 1/4 tsp. whole peppercorns (I use rough ground cracked pepper instead of traditional whole peppercorns)
- 3 large egg yolks
- 8 Tbsp. unsalted butter (1 stick, melted)
- 1/2 tsp. kosher salt
