- corn tortillas
- cheese (Melting, such as Oaxaca, may substitute mozzarella or cheddar)
- 2 tomatoes (diced)
- 1/4 onion (diced)
- 1/4 cup cilantro (minced)
- 2 serrano chiles (diced, optional, may substitute jalapeno)
- 1 lime
- salt and ground black pepper

Directions
- Prepare the salsa by combining the tomato, onion, cilantro, chiles, lime juice, salt, and pepper. Set aside.
- Place a little cheese inside each tortilla. Fold in half and place on a hot skillet until slightly golden and the cheese is melted.
- Place the beans in a serving bowl and top with the pieces of steak. Serve along with the quesadillas and the salsa.
