Description
These little bean and chicken taquitos are perfect for snacking or pair them with a little bit of rice or some vegetables for a meal. The chicken is seasoned with a mixture of cumin and cayenne for a ton of flavor and a little spice while a salad of beans, avocado, tomato, onion, cilantro, and lime acts as a base full of bold and vibrant flavors. Corn tortillas have a nice earthy flavor that works well with all the flavors of the chicken and the salad. Grilled onions and jalapenos add an extra bit of spice and flavor.
Ingredients
- 1 cup beans (cooked)
- 1 avocado (diced)
- 2 Tbsp. tomato (diced)
- 1 Tbsp. onion (diced)
- 1 Tbsp. cilantro (minced)
- 1 lime (medium-sized)
- salt and ground black pepper
- 2 boneless skinless chicken breasts (medium)
- 1 tsp. ground cumin
- 1 tsp. chile flakes (may substitute cayenne)
- 1 Tbsp. olive oil
- salt and ground black pepper
- 1 onion (sliced)
- 1 jalapeno (sliced)
- 4 corn tortillas
Directions
- Mix together the beans, avocado, tomato, onion, cilantro, and lime juice. Salt and pepper as needed. Set aside.
- Mix the oil, cumin, cayenne, salt and pepper together and pour over the chicken. Coat well and let marinate 5 minutes in the refrigerator.
- Grill the chicken until cooked through. Remove, let cool slightly, and cut into strips.
- Grill the onions and jalapeno until the onion caramelizes.
- Heat the tortillas and fill with the bean salad, grilled vegetables, and the chicken.
