Description
This recipe for Battered Eggplant makes a tasty side dish to any dinner entree. - 1 eggplant (large)
- salt
- olive oil
- flour
- 2 large eggs (beaten)

Directions
- Cut the eggplant into slices approximately 1 centimeter thick and place into a colander. When a layer is completely covering the bottom, sprinkle liberally with salt. Repeat. Set aside for 1 hour.
- Blot the eggplant with a paper towel to remove any excess liquid.
- Heat oil in a skillet.
- Dip the eggplant slices into flour and then into the egg. Fry in batches.
- Remove from skillet and place onto paper towels to remove the excess grease. Serve immediately while hot.

Love this recipe! I've made this before without removing the moisture from the eggplant, but taking the time to let them soak makes them hold onto the flour better!

Good! I need to cook a little longer next time, I like it to crunch. Super easy and good though, I’m sure kids would love it

This is so good. Never know how cook an eggplant that has a lot of taste but this definitely made me eat more and more!
