Description

Here's a great way to prepare rice for a change of pace--and to incorporate more vegetables into your meals. Here, sauteed zucchini, eggplant, bell peppers, leeks, and carrots are combined with uncooked rice and water or broth and then baked until the rice is tender and the liquid has been absorbed. What's more, the vegetables become wonderfully tender and the whole dish holds together should you wish shape it into rounds, using ramekins as the molds.

  • 1 zucchini (finely diced)
  • 1 eggplant (small, finely diced)
  • 1 leek (finely diced)
  • 1 carrot (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 red bell pepper (finely diced)
  • 300 grams rice
  • vegetable stock (heated)

    Directions

    1. Preheat the oven to 200 degrees Celsius.
    2. Saute the zucchini, eggplant, leek, carrot, green bell pepper, and red bell pepper together.
    3. Once softened, add the rice and stir to heat through.
    4. Once combined, add the hot vegetable stock. Remember, the ratio should be 2 parts stock to 1 part rice.
    5. Bake for 20 minutes.

    It was some yummy rice. I used brown rice, so it had to cook for a little longer.
