I’ve made this several times but I use yellow rice w/saffron. I’ve used boneless thighs and boneless breast and both are delicious. Chicken & yellow rice is one of those meals that reminds me of being a child playing outside and being able to smell what Momma was cooking…love those kind of recipes so much!
