    The celeriac did quite well in the garden this year so I have been exploring recipes. This was delicious. Being December in Wisconsin I did not have fresh mint so I used a couple tablespoons of mint extract I made last summer. I also made a batch with gluten free sorghum flour (Quaker won't assure that their cornmeal is gluten free). The substitution worked well. A great vegetable to become acquainted with!

    Nice! I did not have dried mint so I replaced it with dried coriander leaves, the patties were more compact and easy to work than your usual veggie burger but it yielded less than stated in the recipe (around 10 patties). I guess that depends on the size and thickness of each party so it can be adjusted if needed :) will be making them again!
