Description
We were taught this recipe on a balmy 36 degree day in 100% humidity at the lovely cafe wayan in ubud. This was the first of several recipes taught throughout the day and offers a fantastic crunch as the flavors of the chicken offset well with the lemon grass, chilli and salty shrimp paste.
Ingredients

- 200 grams chicken (marinated, grilled and shredded, boiled chicken can be substituted - marinade ingredients, M)
- 1 Tbsp. coriander
- 1 piece turmeric (M can be substituted with 1 teaspoon of turmeric powder)
- salt
- 3 Tbsp. coconut oil
- dressing (Balinese)
- 3 Tbsp. vegetable oil (salad oil -, or olive oil)
- 4 shallots (Bawang Merah peeled and finely sliced)
- 2 cloves garlic (Bawang Putih finely sliced)
- 1 lime (., Balinese variety named Jeruk Limo)
- 1 stalk lemongrass (finely chopped)
- chilli (to taste)
- ginger (thumb sized diced)

Directions
- Mix salad oil, shallots, ginger, garlic, chillies, shrimp paste and lemongrass
- Season with salt and lime juice
- Add shredded chicken and mix well
- Service on lettuce leaves with rice as a side dish
