- 4 eggs
- 1 Tbsp. milk
- salt and ground black pepper
- 1 Tbsp. vegetable oil
- 1 scallion (minced)
- 1/2 avocado (cubed)
- 50 grams feta cheese

Directions
- Whisk the eggs, milk, and salt and pepper together.
- Heat the oil in a skillet and saute the scallion. When it starts to brown, pour in the egg mixture and cook at medium-low heat.
- When the edges start to brown, add the avocado and cook for 2 more minutes. Add the feta, cover the skillet and let cook 4-5 minutes more, until the egg is cooked through. Serve.
