Description
Nothing beats a simple but perfect avocado toast made with great ingredients. There's the avocado, of course: ripe but not too ripe, so the slices are luscious but hold their shape. Then there’s the bread: a nice thick slab of rustic, artisan-style. We take the extra step here of pan-frying the bread with a little olive oil, rather than just using a toaster. This recipe is fantastic just as it is, but if you’re feeling creative, try topping your avocado toast with one of these combos: smoked salmon and red onion, cherry tomatoes and a drizzle of pesto, arugula and shaved Parmesan cheese, a poached egg and fresh dill, or everything bagel seasoning and a fried egg. Ingredients
- 1 slice artisan bread (about 7 by 4 inches and 3/4 inch thick)
- 1 Tbsp. extra-virgin olive oil (or 2 Tbsp., for toast)
- 1/2 avocado (firm-ripe)
- 1 tsp. extra-virgin olive oil (for topping)
- 1/2 tsp. fresh lemon juice (or a small lemon wedge)
- 1/4 tsp. crushed red pepper flakes
- 1/8 tsp. salt (regular salt or flake salt)
Directions
- Heat a medium, heavy frying pan over medium-high heat. You want the pan hot, but not smoking.
- Brush both sides of the bread with 1 Tbsp. olive oil (or more, if you like) and place it in the hot pan. Cook, turning once, and reducing heat to medium if the toast threatens to scorch, until it’s golden brown, about 3 minutes per side. Transfer toast to a plate.
- Slice avocado and fan it onto the toasted sourdough, overlapping slices if you like.
- Drizzle avocado with 1 tsp. olive oil and the lemon juice, then sprinkle with crushed red pepper flakes and salt.
