It was interesting to try, but disappointing. The flavor was ok, since you are adding chocolate and sugar, but the texture is terrible. And it’s not decadent like you’d expect mousse to be since aquafaba is extremely low calorie. Also, I left one in the fridge overnight to see if the texture got any better - it was so much worse! The top looked really gross and under the top layer of foam-ish looking stuff, it was completely liquid. If you are really in need of something sweet and have no other options - just eat the chocolate bar needed for this recipe rather than wasting the ingredients on this. You can even dip it in the maple syrup and it’d be more satisfying than eating this “mousse.”
If you need a science experiment though, it is interesting how the aquafaba turns into a substance that looks like whipped cream when you beat it long enough!
