Description
A Dutch baby pancake (sometimes called a German pancake) is a showy puffed pancake that bakes in the oven in a skillet. It's often topped with fruit — here it's apples, but you can use any fresh fruit you like. If it's a firm fruit, like apples or pears, you'll want to saute them first, but if it's a softer fruit like ripe peaches or raspberries you can just pile them right on. Ingredients
- 4 Tbsp. salted butter (divided)
- 4 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup whole milk
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 2 Granny Smith apples (peeled and sliced 1/4- to 1/3-inch wide)
- 1 Tbsp. light brown sugar (packed)
- 1/2 tsp. ground cinnamon
- 1/2 lemon (you may not need it all)
- 2 Tbsp. powdered sugar
Directions
- Preheat oven to 425°F with a rack set in center. Place 2 Tbsp. butter in a 10- to 12-inch cast-iron skillet or other ovenproof frying pan and set in oven to melt as oven preheats. Pro tip: Watch that butter doesn’t get brown. If it melts before the batter is ready, remove skillet from oven, and then return it to oven for another 2 minutes to get it hot again before pouring in the batter. The pancake puffs best if the butter and pan are hot.
- Whisk together eggs, flour, milk, vanilla, and salt in a medium bowl until smooth. (You can also use a blender or hand mixer if you prefer.)
- Remove skillet from oven and swirl so butter coats bottom of pan. Pour in batter.
