  • 500 grams spelt flour
  • 300 milliliters water
  • 15 grams dry active yeast (instant)
  • 1 teaspoon sea salt
  • 1 handful feta cheese (crumbled)
  • 1 tablespoon sesame seeds
  • 1 tablespoon honey

    Directions

    1. Mix together the flour, water, yeast, and salt. Knead about 10 minutes until the glutens form. You should be able to pinch off a section of dough and stretch it between your 2 hands without it breaking.
    2. Make a ball with the dough and transfer it to a greased bowl. Turn the dough in the bowl until all sides are oiled. Cover with plastic wrap and let double in volume.
    3. Once doubled, turn out onto a lightly floured work surface and form a roll or tube with the dough. Cut into 5 equal parts. This will produce 5 pizza 20 centimeters in diameter. If you like bigger pizzas, cut accordingly but remember, they should be able to fit in your skillet. Any sections you do not plan to use immediately, wrap in plastic wrap and freeze for later.
