- 5 eggs
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. olive oil
- 2 Tbsp. unsalted butter
- 2 Tbsp. cilantro (chopped)
- 1/2 red onion (sliced thinly)
- 1 bell pepper (sliced thinly)
- 1 jalapeno (sliced)
- 1 avocado (sliced)
- 1/2 cup cheese (Shredded Mexican 4, divided)
- 1/2 cup tortilla chips (Crushed, I used Tostitos with hint of lime)
- salsa (for Garnish, optional)

Directions
- Preheat oven to 350 degrees.
- In a medium bowl, beat the eggs and mix in ¼ cup cheese, cilantro and olive oil then set aside.
- In a 10 inch, *OVEN SAFE, skillet, melt the butter then add the sliced onions and peppers.
