- 2 Tbsp. flour
- 1 cup chicken stock
- 4 Tbsp. vegetable oil
- 8 flour tortillas (medium-sized)
- 4 cups cheddar cheese (shredded)
- 1 cup scallions (green onions, chopped)
- 15 oz. green enchilada sauce (optional)
- 4.5 oz. green chiles (chopped, we like Old El Paso)
- 4 garlic cloves (peeled, we prefer using a garlic press to add the garlic, if you don't have one, just mince the garlic)

Omg what a mess!!! The flavor was good but this was not easy. Everything kept falling apart. At some point I definitely wanted to quit. Never again will I make it in quesadilla form. I would make again and make it like a bowl or something.

Made chicken thighs in instant pot cooked on high pressure for 8 minutes, natural release for 5 minutes. Also added a touch of smoked paprika. Very tender and juicy!

This recipe was really good! The broth gave it so much flavor. I can’t believe I’ve been using water all these years. And making your own taco seasoning taste better. I will never make it the old way anymore.

I didn't have taco seasoning so I substituted fajita mix and it still came out really good. This recipe has shed light on ways to make a more complex quesadilla outside the basic cheese ones I used to make-- I'll likely refer to it again. The only sidenote I have to say is that the instructions for heating the oven beforehand are a bit confusing as it seems as if an oven is needed to make the quesadillas when in reality, it's just to keep the them warm.

Loved these quesadillas!! I added grilled onions and peppers inside. I used my air fryer to cook them, and they were awesome!

Great recipe! I cut up and added peppers to the chicken when it was simmering in the sauce. Family gave the thumbs up to make it again!

i did not read the page, simply clicked print recipe in order to skip the infernal and disgusting advertisements. i recommend this for anyone who actually intends to cook instead of having your screen slammed with nonsense.
did anyone else figure out why the first instruction had the cook setting oven to 200°? cause it never made sense no matter how many times I read this through. I didn't do it, but wondered what strange occurrence led to such a wacky suggestion for a stove top only recipe.
other than that, delicious! we enjoyed it!

It was great for a first time. I had to substitute coriander for the cumin! But that was fine. The minced garlic really brings this recipe home. I used brown rice tortillas and a skillet that everything stuck to. That was something I would like to change. I completely loved the video with the two gentlemen. It was very entertaining. I will make this again. Oh, I used less of the cayenne, as my boys don’t like spice. It was warm in the mouth, not spicy at all, which was perfect. We ate with sour cream. It was fun.
