- 3 Tbsp. curry powder (your favorite kind)
- 1 tsp. smoked paprika
- 28 oz. chickpeas (drained and dried as much as possible)
- 14 oz. diced tomatoes
- 1 cup vegetable broth (plus up to another 1/2 cup as needed)
- 5 kale leaves (lacinato/Tuscan, de-stemmed and chopped, could just as easily have been thawed frozen organic spinach or peas)
- 1/4 cup coconut milk
- 1 tsp. white miso (mixed with 1/4 cup warm water, optional)

Quick and easy worked out fine

It came out pretty good. The Hubster didn’t like it but the kids and I did. It was a little too spicy. If I make it again I’ll omit the red pepper flakes and add more coconut milk.
