This is one of my simple go to winter recipes because you can add in any additional veggies or beans to round it out. The only thing to remember is the green onions and cilantro go in at the end as a garnish, you should avoid cooking it down in the slow cooker which can lead to that soapy cilantro flavor a lot of people dislike.

Really easy and delicious! The chicken is somewhat dry but I have not had that much luck with chicken in the crock pot. Definitely recommend this recipe.
