- 1/4 cup coconut aminos
- 3 Tbsp. tomato paste
- 2 Tbsp. Dijon mustard
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- 1 tsp. ground ginger (to taste and heat preference)
- 1/4 tsp. ground chipotle pepper (to taste and heat preference)
- 1/2 cup water (from soaking the dates)
- 1/2 purple onion (cut into 1-inch pieces)
- 1 medium zucchini (halved and cut into ½-inch pieces)
- 1 yellow summer squash (medium, halved, seeds scraped out, and cut into ½-inch pieces)
- 1 cup broccoli florets
- 3 cups orange bell pepper (total red &, cut into 2-inch pieces)
- 1 1/2 lb. boneless chicken breast (rinsed, pat dry, and cut into 1-2 inch cubes)
- 1 Tbsp. olive oil
- 1 tsp. sea salt
- 1/4 tsp. pepper
- 1/2 cup fruit (Sweetened Hawaiian BBQ Sauce from above plus extra for side dipping or drizzling)
- 1 cup pineapple (cut into 1-inch pieces)
