I had no cucumber or avocado, so added some sun dried tomatoes and sautéed mushrooms, plus a raw diced shallot in with the greens. Loved it! Oh, also discovered we were out of our beloved quinoa ! so used brown rice. The dressing was subtle and lovely (pan juices/olive oil/Kalamata olives).

Beautiful and we loved the flavors. We had seconds as it is so healthy and good for us. I mixed about one tablespoon of olive oil and the juice from the olives as our dressing although the dressing was not really necessary.

Very good, I agree with others it needs a dressing. I ended up making a tzatziki dressing to go with it.

This was great, could not get my hands on Za’atar, so I used Thyme, Oregano, Coriander, and Cumin. Added garlic powder to the meat as it cooked, and used 1/2 water and 1/2 chicken stock for the quinoa. Better than the quinoa burrito bowls I usually make!

I changed it a little. I added a lemony vinaigrette to give another level of flavor.

It was okay. The combo of flavors works, but it’s still pretty bland. It’s a decent salad, but quite dry. I couldn’t even finish what was on my plate. It needs dressing. I won’t make it again.
