Jeff's Gordon Ramsay's method is, by far, my favorite. It produces soft curds that are the consistency of porridge (only much tastier) which is good for scooping up with toast; no fork required. It starts with butter and whole eggs in a cold pan over low heat. You stir constantly and the eggs cook very gradually. It's finished with a dollop of crème fraîche. If you watch the video, it doesn't seem like it takes very long — about a minute and a half — but it felt like it took me much longer. I assure you, it's worth it. I would also like to note that whether you use a non-stick or stainless steel pan, you're going to have some cleanup to do.

"My crowd-pleasing scrambled eggs...from a recipe in Kenji [López-Alt]'s "The Food Lab" that I adapted to my personal taste preferences: Scramble eggs using a whisk with milk, kosher salt, ancho chili powder & anchovy paste. Set aside for 10-30 minutes to "age" the eggs a little.- In a non-stick pan over medium-high heat, melt some butter and add a little bit of marmite (don't mix it directly into the eggs because it just clumps unless you heat it up first)- Add the eggs, the heat should be enough that they immediately sizzle when they hit the pan. "I like to add a little reduced stock and some cream — not too much of each. Important thing from my POV is to keep the eggs moving early in the cooking process and then allow them to sit — only folding a few times — as they finish the cooking process.
